Beef and Vegetable Soup

When you think of Vegetable Soup, do you think of soup with or without the Beef?

I grew up understanding that Vegetable Soup will contain Beef and Vegetables!  As I have traveled different parts of the United States, I have discovered there are many that think Vegetable Soup will not contain beef, only vegetables.  Isn’t it funny how much normalcy we find in our childhood?  As we discover the world outside of our childhood homes, we see there are many viewpoints in life, even down to our soup recipes.

I had served this recipe once at a party and a patron was very confused as to why there was beef in his soup when the sign clearly stated, ‘Vegetable Soup’.  Introducing “Beef and Vegetable Soup,” so there is no confusion!

Our family usually get a craving for Beef and Vegetable Soup when the weather is cold, rainy, or both!  The fresh tasting vegetables, the tender bites of meat, all marinated in a tomato broth can really warm you up from the inside out.  And what can be more comforting that that?…

Who else wants to enjoy Easy Chicken Salad in Minutes?

Quick Chicken Salad Recipe:  spread it between slices of bread, scoop it onto lettuce, or eat it directly from a bowl with crackers.

There are as many ways to eat chicken salad as there are recipes for chicken salad, but every recipe is dependent on having cooked chicken, which means it is not always quick to make.

In my years of growing up, initially mom only made chicken salad when she had leftover chicken, but she quickly learned, it never lasted long enough to put the container away.  So, she started cooking chicken just to make chicken salad, in hopes that there would be enough for a couple of day’s school lunches.  You could say that our family loves chicken salad!

There is a conundrum that happens when you get a craving for chicken salad: Do I have cooked chicken?  Do I have time to cook chicken? Do I like the chicken salad in the local deli? Do I really want a chicken salad?

All because making Quick Chicken Salad is only possible with having cooked chicken on hand.  Even picking up a Roast Chicken from the deli requires removing the chicken from the bones and chopping.  How fast can you debone and chop chicken?…

Oven Crispy Chicken Recipe

You are going to be amazed when I tell you my secret for the Oven Crispy Chicken Recipe.  When you think about the crunch on that piece of chicken, do you think vegetables? I would say most of you answered, NO.

I love my vegetables, my husband, not so much.  He has a few standard vegetables he likes and that is it.  No need to introduce any new ones, not even covered in cheese.  My early years of being a wife, I cooked lots of enticing vegetable recipes and cheese sauces, but to no avail.

Then I discovered this book: Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good FoodThe concept is about changing how we as cooks perceive the vegetables, and serve them unknowingly to others.  She cooks and mashes the vegetables and adds them to regular recipe favorites.  It is a good book to have on your shelf, kids or no kids.

Some of my new revamped recipes include: macaroni and cheese with cauliflower; spaghetti sauce with carrots; and the brownies “might” contain some spinach.

Vanilla Pudding Review

Vanilla Pudding

Who’d ever think you could make pudding without cold milk? Well, Chef Todd at THRIVE headquarters came up with a Vanilla Pudding Recipe  using mostly Thrive ingredients. On the first finger lick, I was hooked!  It reminds me of the cooked custard pudding my mom made with eggs.

I love that this recipe uses dry ingredients because that means I can have these staples on my shelf, and when I want pudding, I can make it! Added bonus, I can pack the ingredients into a container and travel without a cooler, which is perfect for camping and our lake house….

Berry Treats Recipe

Cravings, do you ever get them? I do.  And sometimes my cravings are associated with childhood memories.  For me, summer always equaled water in some form…beach, river, lake, pool, or water sprinkler.  And what comes with water adventures?  Great Snacks!

Kellog cereal company introduced the Rice Krispie Treat to the world in 1939.  Some eat these marshmallow treats year round, but in our family they only came out in the summers.  They are not only fun to make as a kid, but the slight sticky fingers you get when eating them make it a perfect water treat.  Or so my mother says!…
