Quick Chicken Salad Recipe
Quick Chicken Salad Recipe:  spread it between slices of bread, scoop it onto lettuce, or eat it directly from a bowl with crackers.

There are as many ways to eat chicken salad as there are recipes for chicken salad, but every recipe is dependent on having cooked chicken, which means it is not always quick to make.

In my years of growing up, initially mom only made chicken salad when she had leftover chicken, but she quickly learned, it never lasted long enough to put the container away.  So, she started cooking chicken just to make chicken salad, in hopes that there would be enough for a couple of day’s school lunches.  You could say that our family loves chicken salad!

There is a conundrum that happens when you get a craving for chicken salad: Do I have cooked chicken?  Do I have time to cook chicken? Do I like the chicken salad in the local deli? Do I really want a chicken salad?

All because making Quick Chicken Salad is only possible with having cooked chicken on hand.  Even picking up a Roast Chicken from the deli requires removing the chicken from the bones and chopping.  How fast can you debone and chop chicken?

Freeze Dried Chopped Chicken.  Yes.  It was mind blowing to me when I was first introduced to the Freeze Dried World.  A can of cooked, chopped up chicken just sitting on my pantry shelf, waiting to be used.

The best part of it, I can make a personal serving of chicken salad, just for me, whenever I want.  Now when I am craving chicken salad, there is no conundrum, nor any trips to the local grocery store.

Feeling fancy?  Make the chicken salad with Freeze Dried grapes.  I think the grapes add the perfect sweetness any cafe would be proud to serve.

Anytime life throws you a curve ball, or you just didn’t think ahead, do what I do – make Quick Chicken Salad!

(Sure, the grocery store has cans of cooked chicken, but I am a label reader and not a big fan of the extra ingredients.  Plus, what if you don’t want the entire can?)

Let me show you how quickly you too can have Quick Chicken Salad.  Measure out your ingredients into a bowl. (chopped chicken, grapes, celery, onions)

Quick Chicken Salad Dry

Then you add some water.  I don’t measure, I just pour the water in to cover everything in the bowl. (room temperature or tap water is fine)

Stir it around several times.  Freeze Dried Food has had all of the water molecules removed from itself, so the food will float a minute as it soaks this moisture back into itself.

Now that water has been introduced back into the food, you must treat it as perishable.  Adding water makes everything live again!

It takes about 10 minutes to let the chicken soak up the water, especially the larger chunks.  I normally add my water, then put the bowl in the refrigerator while I get the rest of dinner ready, just in case I get distracted and loose track of time.  (there are a lot of phone calls at our house!)  After 10 minutes have passed, it is time to drain the chicken mixture.  I find a mesh strainer works best to keep all the tiny morsels of yumminess contained.

Now to add the rest of the ingredients.  How fast was that?!

You can be eating before even arriving at the grocery store.

Feel free to adapt the recipe as you see fit.  What makes this our Family Favorite is the use of Helman’s Mayonnaise and a squirt of mustard.  As a child, it was served on a toasted homemade Honey Oat Wheat Bread with a slice of tomato and lettuce leaves.  I now avoid gluten, but this recipe wrapped up in a lettuce leaf still takes me to the childhood place.  Try it!

As a side note: I occasionally substitute the mayonnaise with the cream from coconut milk and it tastes great too! This is helpful to those that have food allergies or in an elimination diet.

Description

White chicken breast meat flavored with celery and onions, covered in a mayonnaise and mustard dressing, with a sweet finish from the grapes will have you coming back for another bite!


Ingredients

Scale
  • 1/2 cup Thrive Freeze Dried Chopped Chicken
  • 1 Tbsp. Thrive Freeze Dried Chopped Onions
  • 2 Tbsp. Thrive Celery
  • 1 Tbsp. Thrive Red Seedless Grapes
  • 2 Tbsp. Mayonnaise
  • 1/2 tsp. Mustard
  • Salt
  • Pepper

Instructions

  1. Measure out the first four ingredients into a bowl.
  2. Add water to cover. Let set for 10 minutes.
  3. Drain
  4. Add the Mayonnaise and Mustard.
  5. Salt and Pepper to taste.
  6. Serve.
  7. Refrigerate leftovers.
